Continuous Clipping
Meat processing and in particular sausage making is a branch of food production that has many challenges in terms of hygiene and safety. Correct sealing (clipping) is perhaps the most important of the processes for the production of sausages. After the meat has undergone the appropriate processing (slicing, addition of seasonings and additives), it should be placed in a paper, plastic, collagen, etc. case (often called gut) and then undergo either heat treatment or drying so that it can consumed.
Improper sealing of cured meats can destroy the product as micro-organisms enter the mass of meat after heat treatment and there is spoilage of the cured meat.
The shape of the sausage also depends on the correct sealing, since if the mass of meat is not properly held inside the case, we notice a different shape due to the weight at the bottom of the sausages. The wrong shape will then lead to difficulties in the heat treatment as the product will have a different thickness in different places and the heat cannot penetrate evenly or correspondingly drying cannot take place (in cases of air cured meats).
Everything has an end – only a sausage has two
The casing is sealed using aluminum clips which are crushed by the machine to integrate with the case and to have a hermetic closure. The crushing process of the Clip is a challenge for any mechanical construction as the forces that must be exerted are great and the manufacturing quality of the machine must be the highest to last over time.
The slicer must be a reliable and robust machine as it is the heart of the deli industry. It is the intermediate station for the meat to mutate into sausage and its operation is a prerequisite for production.
Consumables
The R-ID sealing technology is the only one in the world that guarantees a sanitary and hermetically sealed sausage case. It has been studied and proven (patented) that the R-ID sealing method does not allow micro-organisms and bacteria to enter the mass of meat thus giving the maximum possible life time to the cured meat.
The machine can automatically recognize the Clips and the corresponding components placed by the operator and if there is a wrong combination, it gives a message on the screen. This fact prevents 100% errors in production that lead to the cost of replacing parts and stopping the line until it is repaired.
In addition, PolyClip Systems, having a special separator system between the products (separator), ensures the emptying of the case outside the deli meat, thus raising hygiene levels even more.
